The Demeyere Industry 5 saucepan features our signature 5-ply bonded construction that extends from base to rim. Unlike disc-base cookware that concentrates metal layers only at the bottom, our full-clad design uses five complete layers: two exterior stainless steel layers, two interior 18/10 stainless steel layers, and three aluminum alloy core layers sandwiched between.
This configuration ensures heat travels uniformly across the entire cooking surface and up the sidewalls, preventing the scorching that occurs when heat concentrates only at the base. The aluminum core responds quickly to temperature changes, giving you precise control when reducing a beurre blanc or tempering chocolate.
